Why are umeboshi (pickled plums) considered an alkaline food despite being sour?
●Mystery
It seems that umeboshi (pickled plums) are not an acidic food, despite their sourness. They are so sour that they could make your face look like a pickled plum . The source of this sourness is citric acid. Interestingly, citric acid is also a major component of lemons, which are synonymous with sourness. Does this mean that lemons are not acidic foods either?
●Acidic and Alkaline Foods
The distinction between acidic and alkaline foods is not based on their state before being eaten, but rather on their effect after being consumed. If a food becomes acidic in the body after digestion and absorption, it's classified as an acidic food. If it becomes alkaline, then it's considered an alkaline food.
This is quite a curious phenomenon, isn't it?
●Citric Acid is Not Alkaline
Of course! When citric acid is dissolved in water and its pH is measured, depending on the concentration, it can range from about 1 to 3, which is quite strongly acidic . However, when it enters the body, it becomes alkaline.
No, it's not that citric acid itself turns alkaline, but through a biochemical reaction known as the citric acid cycle, bicarbonate ions are produced, and these are alkaline.
Therefore, it's important not just to avoid foods because they are sour, but to consider how they will affect your body after consumption.
●Alkaline Ionized Water
Of course, alkaline ionized water is alkaline. You don't even have to think about it (laugh).
In our house, we have a continuous ionized water generator, so we can drink as much alkaline ionized water as we want, anytime. It's also great for cooking, perfect for coffee, and even makes rice taste better (laugh).
In any case, it's important to keep your body alkaline. A pH of 7.4 is said to be optimal for the body, being weakly alkaline.
